Fluffy High Banana Protein Pancakes aren't just good for you they taste great and are easy to make. This is packed with the best tasting ingredients to make breakfast so healthy you can eat it without braking your diet.
These are my go to for making pancakes. I love that I can have my protein shake and eat it too. Sometimes it's just good to have a warm breakfast. My daughter loves these pancakes as well so we make a double batch of them and I'll even save some for later and reheat them.
I use coconut oil, gluten free flour, a banana mashed, organic large brown free range eggs and organic protein shake and all ingredients I bought from whole foods.
I find that making fluffy and light pancakes is so refreshing when trying to make healthy pancakes they can get stiff and thick and rock hard and that isn't good. We want to enjoy a healthy breakfast without suffering for quality of the lightness. These pancakes pack in the protein and keep your breakfast well balanced and light.
I whisk 2 large eggs in a bowl and then mash the banana up in a bowl. In the same bowl I add 1 cup protein shake.
In a separate bowl I add 1 1/2 cups of gluten free flour and 1 tsp baking powder. Mix well.
Add wet and dry ingredients together until all the clumps of flour are mixed in. Bananas will leave nice lumps and that is ok.
Heat skillet over low head. Use 1/4 cup of batter to the warm skillet and cool for 60 seconds to 90 on each side.
Serve stacked high and add honey or any toppings you want. ENJOY A PROTEIN BREAKFAST!

1 large very ripe banana
1 tsp. baking powder
1 1/2 cups gluten free flour
Whisk all wet ingredients together and in a separate bowl stir together flour and baking powder.

Best added topping I love is adding almond butter with agave mixed in drizzled on top with raspberries and almond shavings. YUM!
